One of the neighbors shared some summer vegetables with us! Summer vegetables are not only high in water content and healthy, but also highly nutritious when eaten in-season, so they're the perfect fuel for working out!
So, though it's been a while since the last one, I'd like to introduce another Zen Meal!
#ZenMeal
Zucchini and chicken breast with umeboshi and bonito flakes
[Ingredients]
Chicken breast [200g]
Zucchini [1]
Umeboshi [2-3]
Pack of bonito flakes [approx. 3g]
Shiso leaves (if you have it) [3-4 leaves]
[Instructions]
1. Poke holes in the chicken breast with a fork, sprinkle sake (about 1 tablespoon - omitted from recipe list], wrap in plastic wrap, and microwave (600W) for 4-5 minutes. Once cooled, shred the chicken.
2. Cut the zucchini into thin slices, place on dish with the cooked chicken, cover with plastic wrap, and microwave (600W) for 1-2 minutes.
(Continued)
3. Remove seeds from the umeboshi and chop them with a kitchen knife
4. (If applicable) Cut the shiso leaves into thin strips with a kitchen knife
5. Combine everything, adding the bonito flakes, to complete
